How do you keep your wine truly organic? By being organic from top to bottom, start to finish. The organic wine making process may be tougher to manage than conventional wine making processes but organic wines sell far better than chemically aided processes.
The vineyard

Keeping the vineyard organic has really easy solutions. Removing dead leaves will prevent fungi from eating your crops. Some vineyards have utilized the appetite of wild pigs and sheep effectively as they eat all the weeds without taking notice of the fruits and leave natural fertilizers all around. Birds take care of those pesky bugs and chickens take care of the worms, again scattering Mother Nature's own concoction of fertilizer. Also, planting a diversity of plants around your crops will attract bugs towards these and away from your precious fruits. Tie the vines with dried reeds rather than plastic ties.
The wine making process
For an organic wine making process, use naturally produced wine yeast, or wild yeast, rather than those commercially and synthetic produced ones. Go for organic sugar like muscovite type rather than processed sugar varieties. Avoid using sulfites or sulfur dioxides as preservatives so that you can validly call your wine "organic" or minimize its use if a label reading "made from organic fruits" will suffice for you. Use the traditional oak barrels for aging, rather than the modern stainless steel vats.
Bottling
Although the bottle will be hard to keep in line with being organic, the label will be easy. Use recycled paper and soy-based ink for your labels. How about going overboard by using reclaimed wood for the construction of your cellar?
